RECIPE: Chia & Coconut Porridge with Berries
Overnight oats is another name for this go to breakfast option. You can add all the ingredients into a pot, mix well, and leave over night. In the morning breakfast is ready before you get up, all you have to do is heat up the porridge and add the berries, honey and almond flakes.
If I am on the go I put it in a jar and take it with me to eat later on. It is a wonderful way to get a vegan dose of omega 3!
150ml full fat coconut milk (from the carton not the tin) or oat milk (‘barista version’ makes the porridge nice and creamy!)
30g rolled oats
30g chia seeds
2 tablespoons ground flaxseed
1 tsp honey
1/2 tsp mixed spiced or just cinnamon
15g toasted flaked almonds
Handful or organic blueberries and/or strawberries and/or stewed apples
Stir together the coconut milk, oats, chia seeds, flaxseed, and spices/cinnamon. Bring to a low simmer. Simmer and stir often for about 10 minutes until you are happy with the texture.
Pour the porridge mixture into a bowl, mix in the honey, spoon over the berries/fruit and top with the almonds. You can add a couple tablespoons of full fat yogurt if you want to make it creamier.
