RECIPE: Scrambled Tofu on Sweet Potato Toasts

I know. Sweet potato toasts? Bear with me, they are delicious and they do actually work! This is so easy and nutritious. It can be used for any meal time. 

You can add topping like mushrooms, avocado or chilli flakes, it’s up to you. Hope you enjoy! 

INGREDIENTS

150 grams of organic tofu (drained). If tofu is  not your thing scrambled egg is fine too!

1/4 teaspoon turmeric 

I clove of garlic crushed and chopped finely

A pinch of sea salt and ground pepper

1 sweet potato

6 cherry tomatoes halved 

A big handful of spinach

1 tablespoon of pesto 

METHOD

Slice the sweet potato lengthways, about 1cm thick. Place them in the toaster and toast 2-3 times until they are tender. You can check this using a fork. 

Next add a glug of olive oil to a frying pan and heat on medium heat. Add the chopped garlic for 20-30 seconds. 

Then add the tofu or egg and sprinkle on the turmeric, salt and pepper. Scramble until ready. 

Add the spinach and add water as needed. Sauté until wilted. Add the halved tomatoes until warm. 

Place the tofu or egg scramble on the sweet potato toasts. Add a dollop of pesto on top. Place spinach on the side and ta-da!
